Apricot and Cinnamon Oat Bars (Snack Time!)

Many of us love to purchase a nut bar as a snack, and although it’s easy, and quick, making your own is WAY more cost effective. You can easily batch cook these, chuck them in the freezer and take one out the night before. These are packed with good fats and fruit. Cinnamon is a great for balancing blood sugar levels that can play havoc with your hormones, energy and overall health. Quite a few snacks can be fat heavy, and, although we need fats, this is often where we go over the top with our overall calorie intake. These bars have a great balance of fats, fruit and carbohydrates, which make SUCH a balanced snack, that is of course, tasty as well. Always a bonus.

Serves: 8 bars
Diet preferences: Vegetarian, Egg free


  • 100g oats
  • 50g chopped apricots
  • 40g chopped Brazil nuts
  • 2 mashed ripe bananas
  • 1tbsp melted coconut oil
  • 2tbsp maple syrup
  • 2tsp cinnamon
  • 1tsp vanilla essence


  1. Pre heat your oven to 180 degrees C
  2. In a bowl mix together all of the ingredients
  3. Press the mixture into a baking tin lined with baking paper & bake for 15-20 minutes until golden brown.
  4. Cut into 8 even bars.
