Eggs, Garlic Kale and Feta Breakfast Bowl

While some of are definitely not a morning person, this is one way to make you a morning person! Giving yourself something to look forward to after dragging yourself out of bed is always easier! Now, poor old kale has received such a bad rep, it’s almost like the burpee of the nutrition world, but believe us when we tell you this way to make kale is going to change your world.

Some of you don’t like wilted spinach…so for those of you who don’t I guaruntee you will love this one! It’s not soggy and it’s flippin’ tasty.

Eggs, Garlic Kale and Feta Breakfast Bowl

The flavours of the kale mixed with garlic and onion, and the strong taste of the feta cheese works like a dream. Beware – you will want to eat this twice!!

Serves: 1
Diet preferences: Nut-free, Gluten-free, Vegetarian (if you eat eggs)



  • 2 eggs
  • 1-2 large handfuls of kale
  • 1/4 onion, chopped
  • 1/2 tsp lazy garlic
  • 1 tomato, chopped
  • 40g feta cheese
  • Salt and pepper


  • Place a large pan on the hob that has a lid
  • Lightly fry the onions and garlic on a low heat for around 3-5 minutes – keep stirring them
  • Add the kale, mix, put the lid on the pan, turn the heat down and steam
  • Poach the eggs in a pan for 3-7 minutes in boiling water (until your liking to how soft you want them)
  • Chop up the tomato, place in a bowl, pop in the microwave for 2-3 minutes until soft
  • Take the kale off the hob after around 10-15 minutes
  • Place in a bowl, add the tomato and crumble the feta cheese over
  • Place the eggs on top
  • Salt and pepper to taste
