Nutty Satay Chicken

A tasty snack or a good protein option for a main meal! Yum!

– 2 tbsp chunky nut butter
– 1 garlic clove
– Few shakes of soy sauce
– 1 tsp madras curry powder
– 2 tsp lime juice
– 2 chicken breasts (chopped into strips)
– 10cm slices of cucumber
– Sweet chilli sauce to dip


  1. Heat oven to 200C
  2. Mix in a bowl; 2 tbsp chunky peanut butter, 1 finely grated garlic clove, 1 tsp Madras curry powder, soy sauce and 2 tsp lime juice in a bowl
  3. Add 2 skinless chicken breast fillets, cut into strips, and mix well.
  4. Arrange on the baking sheet, spaced apart, and bake in the oven for 8-10 mins.
  5. Cut cucumber into 10cm cucumber strips
  6. Eat the chicken warm with sweet chilli sauce and cucumber. Alternatively, leave to cool and keep in the fridge for up to 2 days.
